Thanks spicychilli! I usually try to cook after the rainbow principle if it's veggies only. Otherwise I have no idea how to make it healthy, it's too complicated (or I'm already too old^^). And unfortunately I know too many vegetarians with poor health because they just avoid meat but don't take care of the nutrient matter. 😞 But eating less meat is good for the environment, that's for sure! 😉
