But what an injustice. Why if I eat on the recommended 1500-1600 calories so immediately the weight jumps even despite physical activity. But as soon as I reduce my diet to 500 calories, everything is fine and lying on the couch leaves. How does it work?

Ah don't be sad:(! It all take times weight loss is not that easy but at the end it's worth it! Don't lower ur calories at 500!! It's too little! See, for example I personally eat 1200-1500kcal and I'm quite active so I'm losing weight nice, in fact u don't need to eat less u need to eat healthy and be active as much as u can!!<333 If u eat 500kcal daily once u finish diet and start eating regularly u will gain weight so fastt cuz ur organism would be used to digest just 500kcal and all and when u start eating regular meals organism won't be able to digest it all at time ! So u need to eat healthy and enough!
