This weekend is my first race, and afterwards I am going to the shore. I was trying to figure out what foods I wanted to start the day with and finish out with this week, etc. I made my own salsa earlier this week, and I have a lot of chicken left over, so I decided to bake some chicken and then shred it. I have some tomorrow to make an omelette with before the race, but today I decided I wanted some mexican inspired dish that satisfied a small want for the tortillas that come with it. I made coconut flour tortillas (REALLY easy - coconut flour, egg whites, water and just fry them on the stove), and used peppers, jalapenos and onions with the shredded chicken cooked in adobo sauce (from canned chipotles in adobo sauce), and some lettuce in the tortilla. It was pretty good but I could probably tweak the coconut tortillas, but for future reference, those chipotles in adobo sauce are HOT. For each wrap, it is a little over 1 gram of carbohydrates each. GUILT FREE (ISH) TORTILLAS!
