Made a batch of "riced" cauliflower. It works much better to grate it in the food processor. I had some tonight stir fried with seasame oil. I also stir fryed some vegetables with sesame oil and had a nice big bowl of "rice" and veggies. I love sesame oil - but it is 4 points for a Tbsp. In the future I'll restrain myself to a teaspoon - but I love the smell as it heats up and it adds such nice flavor - a very yummy and healthy side dish! I put the rest of the riced cauliflower in sandwich bags and froze them....I'll have to soak up any moisture with paper towels when I thaw.

LOVE the riced cauliflower! Thanks for telling me about it. It really makes for large portions when mixed with veggies! I bought a head yesterday and plan to rice and freeze as well. Have a wonderful week! I plan to take the recumbent out this afternoon for her first 2010 ride. She is a good windy day ride.
