Carbs vs. most vegetables This is piggy backing on a post I made last week. I love my veggies. I'm still happy that avoiding starchy foods has been working for me. Eating plenty of vegetables allows me to leave the table feeling satisfied and keeps my caloric intake down. I have heard it said many times that carbs are carbs. It is true that vegetables may have carbs but many veggies have a lower caloric count and add fiber. I think it's the fiber that lowers the net carbs ratio. I could be wrong but I'm just posting my personal observations...

I understand about not doing veggies. Even Atkins allows them. You're doing so well with your current plan. Carbs in a veggie are different then carbs in a piece of bread (sugar, refined flour, etc.) There is no comparison, IMO. What is your new goal?

There are no bad carbohydrates, or good carbohydrate. However, you are correct it is FIBER that makes the difference, and here's why. You cannot digest Fiber, and it slows the absorption of sugar into the blood stream. When you eat vegetables and they have for example 15gms of carb, but have 3gms of Fiber. The NET carbs are only 12gms..(15-3). Now suppose you eat a piece of bread equals 12gms of carbs. The sugar load in the bloodstream is the same. Ideally you want to avoid vegetables that grow underground as these are higher in sugars, and eat more veggies that grow above the ground...lower in sugar.

Agree with you. Important to get those veggies in and fiber. And I just read about a 5 to 1 rule for determining if a product you are thinking of eating is fiber balanced. Divide the carbs by the fiber carbs should be no more than 5 times fiber. I tried that out in the store this afternoon and sure enough to it led me to. The less refined foods. I ended up buying doctor kracker for the first time as a result and I really like in that they fulfill that want for bread. Doing great John! Congrats.

@ ClassicRocker, my new goal is to reach my goal. I have hit it but only for a day or so. I have been in the Blue before. I even managed to stay Blue for weeks but not below my goal.
@ Ettenaj, I did a little quick research and found out that corn is actually a fruit. No, I don't think it's a bad carb but it does contain more starch than some other plant based foods. I enjoy it but in moderation...
