Green Tea Truffles
A great dessert, the green tea and dark chocolate are antioxidants.

- Heat the half & half cream in a small saucepan over medium heat. When it comes to a simmer, remove from heat and add the 4 tea bags. Allow to steep for 5 minutes.
- Gently squeeze bags to extract tea flavour into the half-and-half. Remove bags and bring half & half back to a simmer.
- Pour hot cream over grated chocolate in a medium bowl. Stir to combine.
- Place bowl in freezer until set, about 10 minutes, removing and stirring evrey 2 minutes. Chocolate is ready to roll into truffles when it is no longer a pudding-like consistency and is starting to harden.
- Scoop 2 teaspoon size balls and roll to form 1" balls. Roll in cocoa powder to coat. Store in airtight container in fridge for up to 2 weeks or freeze.

Made these on Friday and after reading reviews, tweeked it just a bit. Used Green Tea Superfruit tea bags instead of de-caf green tea. Added 1/4 t vanilla to the cream to help sweeten and added a stevia packet to the cocoa to help with the bitterness. Had a problem with the chocolate hardening....left in freezer for hours before it was workable enough to form a ball and roll into cocoa. After warming to room temp, they started to lose their shape and were very, very soft to try and pick up. Was barrased taking them as part of my cookie exchange. Can anyone tell me what I did wrong or know why they wouldn't keep their shape? As far as flavour, they were delicious, but texture left much to be desired!

I love this recipe it is a great way to satisfy my sweet craving. I did not like the cocoa powder coating so I left that off. To sweeten it up a little I put half a tablespoon of honey which only adds 30 calories to the entire batch. Enjoy!

Gonna have to give this a try. Sounds interesting. Could add vanilla extract to sweeten it up a bit.

I made this yesterday, but it was really bitter and found it difficult to enjoy. I put some nutrasweet on it to sweeten it a bit, but that didn't really work. To those who gave positive feedback, can you please share how you made tasty.
Overall, the recipe is very healthy and very easy to make. Just need to find out exactly how to make it more palatable (ie. sweeter).
